Why does the AI traffic on takeoff level off to raise the gear.

I will guess that the default Microsoft AI traffic would do the same.  I don't think it's specific to Traffic X.  I think it's just how the simulator has been programmed.  But I'm only guessing.
 
If you ask me, I'd say that apart from the short length of runway used, the takeoffs are fairly realistic.  Real aircraft change pitch shortly after takeoff in a similar way to how the AI do.  The difference being that real aircraft continue climbing at that changed pitch, whereas simulator AI traffic pitches up again after raising the gear.  But the initial pitch change by the AI planes makes takeoffs in the sim seem fairly realistic.  Well, to me anyway.
