Hi Chaps.

I've just downloaded the C152 for Xplane 11. I have flown the 152, and its been very well modelled. Apart from the AWFUL CONTROL SOUNDS! Whenever I move the yoke (roll or pitch) I get what sounds like someone tearing open a aluminium drinks can, it is awful. The banging of the controls hitting the stops is realistic yes (if you were absolutely slamming the yoke around!) but I think they have tried to model the sounds of the control cables and pulleys moving. It is terrible.

Is there a fix for this or a way to switch it off/turn it down?

The control movement sound is based on the rate at which you move the controls.  Moving them smoothly and slowly will make them much quieter.

They are also part of the "Aircraft Interior" sound slider in X-Plane's sound options.  Turning that slider down will decrease the volume of the control movement sounds (but it will also quiet some of the engine sound).

[EDIT]  Oh, good news!  I see in our internal system an update that says: "added control sounds to the UI volume slider so they can be controlled separatelly."

I expect this will probably be in the next update.  :)
