I have been having problems with these aircraft randomly stalling when climbing   meaning i can never reach a crusing alt above 25000, even at level flight the aircraft stalls whats going on.

Usually a stall is caused by too low airspeed or too high angle of attack. Also if you have a full load of pax and fuel you need to increase altitude in steps.

Been a long time since I have flown or read the manuals of these aircraft. Have you read the manuals?

Definately need to go up in steps in DC10 I was having that problem first few times I used it.. sure it says about that in the manual..
