An idea for an update for the spotter is to make him walkable with the joystick in a normal walking speed.

Not a bad idea. But I think the FSX graphics engine may not work well enough for that. Flaps, undercarriage etc, yes ... but the animations and physics required to achieve human walking movement and motion is an entirely different proposition.
 
Whilst it is not a "walk" (so to speak), you can, of course, SLEW him.
