What I find a bit funny is that even though he isn't on the board at easyJet, he is still a shareholder. But he wants to set up this airline to rival them? It's financial suicide if you ask me.

Didn't he sign that contract recently that said he couldn't set up a rival airline, or have a managing role in one for the next five years?
Jazz that's not a drawer its a trash compactor. And when Uncle Phil sees this it'll be a Jazz Compactor

Yes he did agree not to, but in two quotes from the same article it says

' Haji-Ioannou has had a turbulent relationship with the airline in recent years and agreed as recently as last October not to set up a rival.'

later on it says

'Haji-Ioannou declined to give more details of the launch, saying only that he will not now abide by the terms of last October's agreement. He accused easyJet of breaching its provisions by smearing him in off-the-record briefings to journalists.'

We also now know why he was so against Easyjet growing as fast as it did! i remember reading ( small i might add ) article after article whether it was in newspapers or aviation websites or magazines, that Stelios always seemed distant to Easyjets growth plan. I wonder how long he's been thinking this airline up?

I read this on another site recently. Looks like Fastjet is Africa based.
Fastjet (Accra Kotoka (ACC)) , the new African low-cost carrier backed by easyJet (U2, London Luton (LTN)) founder Stelios, has reportedly decided on Accra Kotoka (ACC) as its first base. Here is alot more information on the Fastjet start up
